Welcome back to my rice cooker series 🐔 For the ginger scallion sauce Chopped scallions Minced ginger MSG (or salt if you don’t like msg) Sugar Sesame Oil Neutral flavored oil 1. Heat up the oil. My rice cooker is weight sensitive, so I pop the lid on to do this. 2. Combine chopped scallions, minced ginger, msg, sugar, and sesame oil in a heat safe bowl. 3. Pour hot oil on top. Adjust to taste. For the rice and chicken (for a 4 c cooked rice cooker, the small one) 1 1/4c chicken broth/stock 1 c washed jasmine rice 3 minced garlic cloves 1/2 to 1 tbsp soy sauce (adjust depending on how salty the broth/stock is) 1 tsp sesame oil 2 boneless skin on chicken thighs (season with salt and pepper + brushed with dark soy sauce for extra color but this is optional) 1 in piece of thinly sliced ginger Scallion bottoms Neutral flavor oil 1. Add a bit of oil to the rice cooker followed by the garlic and rice. Hit cook and let slowly sauté till aromatic. Not gonna lie, I definitely got lazy and impatient waiting half way through so this is optional :p 2. Add the chicken broth, ginger, scallion bottoms, and chicken thighs.
