Let’s break in my new French cast iron pan with a delectable French delicacy, Tarte Tatin! 🍎🥧 If you’ve never tried it before, tarte tatin is sort of like an upside down caramel apple pie. I love to add thyme to mine for a lovely herbaceous flavour, however you could use cinnamon, or try it with pears & ginger! We made our own puff pastry but you can save time and use store bought, too! Bon Appetit! 🇫🇷 Apple Tarte Tatin 🍎4 apples, peeled, cored, and sliced 🍎3/4 cup brown sugar 🍎75g (5 tbsp) unsalted butter 🍎Pinch of fresh thyme leaves 🍎2 tbsp lemon juice 🍎Puff pastry circle slightly bigger than pan 🍎Thick cream or ice cream, for serving 1. Preheat oven to 200c/ 390f and melt butter in a shallow cast iron pan or an oven-safe frying pan 25-30cm in diameter. Add sugar and lemon juice then Mixy Mix for a few minutes to dissolve and thicken. 2. Once caramel is bubbling and smooth, add thyme leaves and apple slices. Let cook for 5 minutes undisturbed then turn off the heat. 3. Gently drape prepared puff pastry circle over the caramel apple mixture, tuck it down towards the bottom of the pan, then place pan into hot oven. Bake for 20-30 minutes, or until pastry is puffed and golden. Let rest for 15 minutes, then carefully flip & turn over onto a plate. Serve with cream or ice cream.
