Episode 2 of the rice series! Jollof Rice Recipe ❤️👇🏾 have you ever had it?! this rice was so flavorful, fluffy and delicious. It’s best served with stew, or any protein really, plantain! 32 oz of rinsed basmati rice 3 red bell peppers 3 large tomatoes 1 large onion 3 bulbs of garlic scotch bonnet or habanero peppers 1/2 cup of oil 1/2 red onion sliced 6 oz tomato paste 1 tbsp of chicken bouillon 2 tbsps of curry powder 2 tsp of fried thyme salt, pepper (I used about 1 tbsp of each) 2-3 cups of chicken broth 1 Rinse the rice to remove excess starch. Set aside. 2 Roast onion, garlic, red pepper, scotch bonnet, and tomato at 400 degrees, then, blend until smooth. 3 In a large pot, fry sliced onions in oil, add tomato paste, and then the blended tomato mixture. 4 Mix in seasonings and add in rinsed rice. Let it cook for a few minutes. 5 Pour in broth, bring to a boil, then simmer on low heat for 30-40 minutes. 6 Remove from heat, let it steam for 5 minutes, then fluff with a fork. 7 Garnish with fresh scallions (optional). #jollof #jollofrice #ghana #nigeria #jollofrice #ricetok #howtomakerice #ricerecipes #easyrecipes
