Coconut Shrimp 📕Recipe here: ❂ Ingredients: 1 pound large raw pink shrimp 1 cup flour 2 eggs 1 cup panko breadcrumbs 1 cup grated coconut (unsweetened) 1 teaspoon salt 1/2 teaspoon garlic powder 1/4 teaspoon cayenne pepper 1/2 lime zest oil For sauce: 1/4 sweet ginger chili sauce 1/4 apricot jam ❂ Cooking process: - Rinse the shrimp and remove the shell, leaving the tail. Make an incision along the back like a butterfly, remove the intestinal vein. - Combine coconut and panko in a large bowl and stir. Whisk two eggs in another bowl. In a third bowl, mix flour, salt, garlic powder, cayenne and lime zest. - Roll the shrimp first in the flour, then in the egg, and then in the coconut mixture. - Heat oil to 350F. Dip the shrimp in the oil and fry until golden brown.
