Hot honey frickle chicken sandwich: 2 large chicken breasts about 12 pickles 3 cups of panko bread crumbs 2 tsp paprika 2 tsp garlic powder 1 tsp each salt and pepper 1/4 cup freshly grated parmesan cheese For the sweet potatoes: drizzle of olive oil 1 tsp of each paprika, salt, pepper 4 brioche buns, mayo or ranch dressing Brine chicken in pickle juice, pour pickle juice over chicken until covered. Refrigerate for at least 1 hour. Preheat oven to 425. Cover the sheet pan with a sheet of parchment paper. Toast 3 cups of panko bread crumbs, about 4-5 mins until golden. Transfer to a shallow bowl, mix in garlic powder, paprika, s&p, and grated parmesan. In separate crack and whisk egg. In the third bowl add 1 cup of flour. Start with the pickles, dredge with flour, egg and panko bread crumbs, and place on parchment. Then do the same with the chicken breasts. Dice sweet potatoes, place on one end of the sheet pan, and drizzle with olive oil, paprika s&p. Toss. Place chicken breasts on parchment on the opposite end. Bake for 15 minutes. Remove sweet potatoes. Place pickles on the pan. Broil for 3 minutes. Remove both chicken and pickles from the pan. Place brioche buns on and toast at 425 for about 3 minutes. Drizzle hot honey over everything at the desired amount. Put ranch or mayo on the bun, half of one chicken breast, and 3 to 4 frickles.
