In the meantime, heat 2 Tbsp olive oil in a large skillet over medium heat. Add three sliced garlic cloves, stir, and cook until the garlic is starting to turn golden around the edges, about 4 minutes. Add 1/2 tsp chili flakes and 1 Tbsp za’atar and stir to coat in oil. Once fragrant, ladle in 1/3 cup pasta water to prevent the spices from burning. Reduce heat to low, and once the pasta is nearly al dente, transfer to the skillet. Toss to coat the pasta in sauce and once it begins to cling, remove from heat and add 1 Tbsp labneh and more pasta water. Toss to emulsify. Serve with flaky sea salt and more chili flakes and olive oil. I used Labanese Zaatar, which usually includes sumac, sesame seeds, and, sometimes, salt.
