Nah these were SO GOOD 😭 Ingredients: - 1kg boneless, skinless chicken breast, cut into bite-sized pieces - 3/4 carton buttermilk - 5 tablespoons hot sauce (I used sriracha) - 1 teaspoon cayenne pepper - Salt to taste - 1 cup all-purpose flour - 1/2 cup cornstarch - 1/2 cup crushed cornflakes - 1.5 tablespoon paprika - 1 tablespoon cayenne pepper (adjust to your preferred heat level) - 1.5 teaspoon garlic powder - 1.5 teaspoon onion powder - 1.5 teaspoon salt - 1.5 teaspoon pepper - Sunflower oil Instructions: 1. In a bowl, mix buttermilk, hot sauce, cayenne pepper, and a little salt. Add the chicken pieces and ensure they are fully submerged. Marinate for at least an hour, or overnight if possible. 2. In another bowl, mix together the flour, cornstarch, and all the spices for the breading. Ensure it's well mixed. 3. Heat your vegetable oil in a deep fryer or a large, deep frying pan to about 170°C. You need enough oil to fully submerge your chicken pieces. 4. Take each piece of chicken out of the buttermilk, allowing the excess to drip off. Coat each piece thoroughly in the breading mixture. 5. Once the oil is heated, carefully add the breaded chicken pieces. Don't overcrowd the pan – you may need to do this in batches. 6.
