And it might be surprising to you but really it’s the one and only Spaghetti al pomodoro! 🍅🍝 Obviously the quality of the ingredients here have to be at their best to get an incredible result. You need to buy the best quality extra virgin olive oil you can find. If you don’t buy the right pasta, you cannot make a good dish, so you need to buy the best bronze drawn dry pasta too. And for the tomatoes, this is of course a summer dish and they are still in season so let's make the most of them! I have used a mixed of cherry tomatoes and baby plum here. If this was my #lastmeal I’d be happy. Check out the food festival hub and show me what your “last meal” would be! Recipe below: 1. Pat your steak dry with paper towel and season generously on both sides and all edges with salt and pepper (add any spices you want here too). Place in a vacuum sealed bag then into a sous vide for 1-4 hours @54°C 2. Wash 2 large brushed potato’s then cut into whatever size fries you want. I prefer to leave the skins on but you can peel them if you’d like. Wash your cut potato’s in cold water until it runs clear. Then leave in a bowl of ice water (I didn’t have any ice) for 1 hour. 3. Drain your fries and dry them as much as possible with paper towel before frying them in batches at 160°C for 5 minutes. Allow to drain on a wire rack set over a baking sheet to cool before patting dry again with paper towel. Place in the freezer for at least 30 mins or leave in the freezer until you want to use them next. 4. Remove steak from vacuum bag and pat dry with paper towel (this is a lot of paper towel tbh). Sear in a screaming hot cast iron pan to form a nice, golden crust. We aren’t cooking the steak at all here, just getting a crust.Rest your steak for 5-10 mins in foil. 5. Take fries out of the freezer and fry them for another 2-3 mins or until golden brown at 190°C. Take out and IMMEDIATELY season with salt and any spices you like. You need to season them when they are hot or the salt won’t stick. 6. Make the chimichurri by finely slicing parsley, garlic and half a red chilli.
