if you haven’t tried the habanero chicken quesadilla from Lolita in Boston…you 👏 are 👏 missing 👏 out! but now you can make it at home. it’ll never be quite the same as the real thing, but it does satisfy the craving. RECIPE: for the chicken: -1 large chicken breast (about 9oz), cut into very small bite-sized pieces -1/4 cup @Siete Foods habanero botana sauce for the peppers & onions: -1 bell pepper, finely diced (about 1 cup) -1/4 small red onion, finely diced (about 1/3 cup) -2 tsp taco seasoning (i used Siete mild) for the quesadillas: -5 large tortillas (i used low carb flour tortillas, feel free to use GF!) -10oz oxaca cheese, shredded (brand is @Cacique ) for the rancho fresca sauce: -1/2 cup full fat plain greek yogurt -2 tbsp salsa (try to use a thin/watery one!) -1 tsp taco seasoning -1 tsp lime juice for topping: -avocado mash -bacon crumbles (bake at 400F for 15-18 mins) -chopped green onion -lime wedge marinate chicken in the habanero sauce for at least 1 hour. preheat oven to 425F. meanwhile, bring a large pan to medium high heat. once hot, add a bit of oil. add chicken and bell peppers & onion mixture. let cook for 5 minutes, stirring occasionally, until chicken is cooked through. set aside. spray a baking sheet with oil. then, add tortillas. spread cheese evenly over the tortillas. add chicken and veggie mixture to one side. then, carefully fold them in half. spray the top with more oil. bake for 8 minutes, flip and bake for 8 more minutes. some of the liquids might ooze out, just a warning! top with a drizzle of the rancho fresca, crumbled bacon, green onion, avocado mash & a lime wedge. best eaten fresh, enjoy :) #boston #bostonfood #bostonrestaurants #lolitaboston #lolita #chickenquesadilla #quesadillas #quesadillarecipe #chickenrecipes #comfortfood #mexicanfood #copycatrecipe #habanero
