food / body image chat + lunch w mee 🍠🌿 (recipe below)!! huuge thank you to @spencer barbosa🧚🏻 , @Adriana Blanc, @Betina Gozo Shimonek, @Brittani Lancaster, @Abbey Sharp, @Olivia kirkby, @grace tutty, @Justine Doiron, @Leana Deeb, @Trace Alexander, @Achieng Agutu | Confidence 👑 for helping me learn to love and take care of myself 🤍 these are just a few of my favorite creators — tag yours in the comments!!!!! ingredients: ladkes: 1 large russet potato 1 sweet potato 2 eggs 1/2 yellow onion (finely diced) 1/3 cup flour 1/2 tsp coriander 1/2 tsp cumin 1/2 tsp salt 1/2 tsp garlic powder bean salad- 1/2 chopped green pepper 1 cup drained and rinsed white beans juice of 1/2 lemon 1/2 tsp cumin 1/2 cup chopped cilantro salt and pepper to taste + sour cream/greek yogurt for topping 1. peel and grate the large russet potato and sweet potato. Squeeze out excess moisture using a clean kitchen towel. 2. combine the potato with onion, eggs, flour, and spices. 3. heat 1 inch of vegetable oil in a skillet over medium heat. scoop little dollops of the potato mixture onto the skillet, lightly flattening to form ‘pancakes’. cook until golden brown on both sides, about 3-4 minutes per side. repeat with remaining mixture. transfer to a paper towel lined plate to remove excess oil. 4. for the bean salad, combine chopped green pepper, drained and rinsed white beans, lemon juice, cumin, chopped cilantro, salt, and pepper in a bowl. 5. top the ladkes with dollops of greek yogurt and the bean salad. enjoy <3 #bodyconfience #bodypositivity #bodyneutrality #healthyrecipe #lunchideas #easylunch #foodfreedom
