Ok, what are you having for dinner tonight because I think this Loaded Mercimek Çorbası (Lentil Soup) is the one! Ingredients: 300g split red lentils, washed + drained 75 g brown basmati rice, washed + drained 75g quinoa, washed + drained 3 litres cold water 1 large sweet potato, finely grated 2 large carrots, finely diced 2 celery sticks, finely diced 1 large onion, finely diced 1 chicken or vegetable stock cube 500 ml boiling water 4 tbsp fresh lemon juice 1 tsp salt 1/2 tsp coarse black pepper To serve Pul biber Dried mint Grilled black olives Toasted bread Fried hellim cubes Lemon wedges Sea salt Cracked black pepper Method: Add the drained lentils, rice and quinoa to a large pan with the 3 litres of cold water. Place the pan over a high heat and bring to the boil for 5 minutes, skimming and discarding the foam that forms on the top. Reduce the heat a little and cook for 20 mins until the soup starts to thicken. Dissolve the stock cube in the boiling water in a heatproof jug. Add the stock to the pan, the the vegetables and cook for a further 10-15 minutes until the vegetables are tender. Add the lemon juice, salt and black pepper to the soup pan, give everything a gentle stir, cook for a further minute and then remove one-third of the soup and blitz carefully in a food processor. Return the blended soup back to the pan. Serve bowls of the soup topped with the croutons, hellim, a sprinkling of pul biber, dried mint, grilled black olives, l an extra squeeze of lemon juice.
