Episode 2 of the rice series! Jollof Rice Recipe ❤️👇🏾 have you ever had it?! this rice was so flavorful, fluffy and delicious. It’s best served with stew, or any protein really, plantain! 32 oz of rinsed basmati rice 3 red bell peppers 3 large tomatoes 1 large onion 3 bulbs of garlic scotch bonnet or habanero peppers 1/2 cup of oil 1/2 red onion sliced 6 oz tomato paste 1 tbsp of chicken bouillon 2 tbsps of curry powder 2 tsp of fried thyme salt, pepper (I used about 1 tbsp of each) 2-3 cups of chicken broth 1 Rinse the rice to remove excess starch. Set aside. 2 Roast onion, garlic, red pepper, scotch bonnet, and tomato at 400 degrees, then, blend until smooth. 3 In a large pot, fry sliced onions in oil, add tomato paste, and then the blended tomato mixture. 4 Mix in seasonings and add in rinsed rice. Let it cook for a few minutes. 5 Pour in broth, bring to a boil, then simmer on low heat for 30-40 minutes. 6 Remove from heat, let it steam for 5 minutes, then fluff with a fork. 7 Garnish with fresh scallions (optional). #jollof #jollofrice #ghana #nigeria #jollofrice #ricetok #howtomakerice #ricerecipes #easyrecipes

When I had the idea to make waakye jollof, I did a few research to see if it was a thing and found nothing but, apparently it does exist in the northern part of Ghana and someone also said Senegal. Please tag a northern Nigerian to see let’s find out from there too. So, at first my concern was how would it taste? Surprisingly it was more than I expected. It tasted exactly like waakye and jollof at the same time but much tastier. The aroma was beautiful and the flavours wasn’t confusing at all. Yum! Yum! lol… As you know jollof depends on the stew and waakye depends on the texture which I executed both to perfection. (Exactly how I like mine) And no you don’t need stew to serve, it will mess up the taste.(I tried it) To those saying kwenkwen, IT IS NOT. 2 cup beans 1 1/2 cup rice Well seasoned stew (enough to make jollof) 1 1/2 tsp baking soda 3 bay leaves Salt tt Oil Enough water 1- In a saucepan pour in beans,water,baking soda and cook halfway through. 2- Now add rice,stew,salt,bay leaves then stir nicely and cover to cook for few minutes on medium low. (Added oil off cam) 3- Redistribute heat then cover with parchment paper and cover. 4- Redistribute heat again,cover and turn the heat on lowest setting until cooked. Serve and enjoy! Note: You can use sorghum leaves if you don’t like baking soda || potash. If you don’t use either you won’t get the taste right. #latifahcooks #waakye #waakyejollof #jollof #creativemind
