Vegetable oil or canola oil for frying 8 thinly sliced beef cutlets (4 sliced in half, pounded out nice and thin) Salt, pepper and garlic powder to season the meat on each side 3 eggs, mixed 1/3 cup flour 1 cup Italian seasoned breadcrumbs 2 tbsp fresh Italian parsley, chopped Lemon wedges, optional *Start by slicing your beef down the middle making 8 pieces total. *Pound your beef out if you need to make the cutlets nice and thin. *Season each side generously with salt, pepper, and a little garlic powder. Set aside. *Grab 3 bowls, add your flour to one, eggs to one, and breadcrumbs to the other. *Chop your Italian parsley and add it to your breadcrumbs. Add a pinch of salt to your breadcrumbs as well. Mix. *Dredge your cutlets into the flour, flip over to coat the other side, shaking off any excess. Now dip it in the egg mixture, coating evenly, and lastly into the breadcrumbs. Repeat. *To a large frying pan add your vegetable or canola oil. You need enough oil that the cutlets are almost fully covered. *Set to medium/high heat and drop your cutlets in, working in batches if you need. Fry on each side for 3-4 minutes. Once golden, flip and cook on the other side until cooked through.
