Family Friendly Chilli Con Carne Here’s everyone’s favourite weeknight dinner, the classic chilli con carne made family friendly and suitable for little tummies thanks to my go to baby/toddler friendly Mexican spice mix! The handy @jml_direct hands free can opener is my new best friend in the kitchen, gone are the days of fighting with pull tabs and the mess of using manual tin openers. This is a one touch process, then I can carry on making dinner saving time and cleaning up! Recipe: Ingredients 500g quality beef mince (5-12% fat) 1 400g tin of plumb tomatoes 1 tin of kidney beans 1 small bunch of coriander leaves 1 onion finely chopped 2 bell peppers finely chopped (any colour) 1 tbsp vegetable oil 1 beef stock cube My Toddler Friendly Mexican Spice Mix 1/2 tsp paprika 1 tsp oregano 1 tsp cumin 1 tsp smoked paprika 1 pinch cinnamon 1/4 tsp turmeric Method Heat the oil in a large pan over a medium/high heat then once hot add the chopped onion Fry for around 5 minutes stirring continuously until they start to soften Add the beef mince, spice mix, garlic and beef stock cube then use your spoon to break it up, continue to do this as it starts to brown After around 7 minutes cooking your mince should be nicely brown, now add the chopped peppers and mix well Add the tin of tomatoes and pour in the water, then give it all a good mix and leave to simmer on a low heat with the lid on for 20 minutes Drain your tin of beans then pour them into the pot, along with the cube of dark chocolate, the coriander and give everything a good stir Allow the chilli to simmer for another 5 minutes, then serve with cooked basmati rice #JML @JML Direct ad
