$20 Carnitas Mac n Cheese 🧀 @amazonfresh #ad @Danny Kim -Carnitas Pork shoulder - 5 lbs Orange - 1/2 White onion - 1/2 Garlic - 3 cloves Bay leaf - 2 Cinnamon - 1 stick Brown sugar - 1/4 cup Mexican coke - 1/4 cup Milk - 1/4 cup Water - 2 cover Trim the pork, remove fat. Season meat all sides. Render out fat and sear pork and set aside. Add brown sugar, onion, bay leaf, cinnamon, orange, garlic, meat back in, Mexican coke, and enough water to cover. Simmer for 90 mins. Add milk, simmer additional 30 mins. Remove meat, and strain liquid. Reduce liquid down to a glaze and toss meat in that. -Salsa cruda Jalapeño - 2 Tomatillo - 4 Garlic - 2 cloves Cilantro - 1/2 bunch Salt to taste Char all veg, add to blender with cilantro. Season with salt - Greek yogurt cream Greek yogurt - 1/2 cup Lime - 1, zested Sugar - 2 tsp Salt - 1 tsp Zest lime, and combine all ingredients. Set aside Masa crumble Masa - 1 cup Butter - 2 tbsp Cotija - 1/2 cup Melt butter, and add to masa along with cotija. Bake at 350F 20-30 mins until brown . Set aside Mac and cheese Elbow mac - 3 cups Pork fat - 4 tbsp Masa - 1/2 cup Milk - 1-2 cups Cotija - 1 cup Make the roux, combine fat with masa and cook over low until nutty. Add the milk and whisk till simmering, add the cheese and melt completely. Cook your pasta 2 minutes shy of Al dente and add to cheese sauce. Toss to coat and bake at 400F for 10 mins, then finish under broil to get crispy. Top with carnitas, salsa cruda, crema, and crumble #carnitas #macandcheese #cookingchallenge #chef
