The holidays are upon us and it's a great opportunity for me to value those close to me. Chef Patrick's dedication to his craft and his passion for food are unrivaled. Over the years, he has been there for me when I needed him and I decided to not only make this wonderfully easy recipe with him, but also gift him this brand new @VitamixCA. My Vitamix blenders have helped me become a better chef and taken my food to the next level. I know in my heart Chef Patrick will make the most of this holiday gift. Lemon Curd Tarts Recipe Ingredients: 5 large eggs ½ cup fresh lemon juice 2 tsp lemon zest ½ cup unsalted butter, cubed 1 ½ cup granulated sugar ¾ tsp kosher salt 12 tart shells, pre-baked 2 tbsp freeze fried raspberry Instructions: 1.Add all ingredients except the butter to the Vitamix and blend on Variable 1 to start. Gradually increase to Variable 10 and allow mixture to blend for 5 minutes, it will become very hot. 2.After 5 minutes have elapsed reduce to Variable 3, carefully remove the lid plug and add butter. Blend for 30 more seconds then allow mixture to cool to room temperature.
