Sausage & Broccoli Casserole 1kg sausages (any type you like) 2 x brown onions diced 2 x cups mushrooms diced 2 x heaped tbspn minced garlic 2 x tbspn butter 1/4 x cup plain flour 2 x cups beef stock (use any stock you like) 2 x tbspn Worcestershire sauce 1-2 tbspn tomato paste 1/4 x cup water Salt & pepper to taste Mixed Fresh or Dried Herbs (I used Thyme & Rosemary) 1 x bag frozen broccoli (or fresh) Method: Brown sausages, remove from the pan Dice onion & add to pan Once browned, add minced garlic Cook for 2-3 mins, mix in tomato paste Add butter & melt Add mushrooms and mix, simmer for 5 mins Add cup flour, slowly add stock til all mixed Once sauce is smooth, add Worcestershire sauce, water, herbs. Taste test and add salt & pepper as needed Add sausages back in (I cut mine up) Lid on and simmer for 5-10 mins low heat Add broccoli and stir thru, lid back on to allow broccoli to defrost.
