Jalapeno poppers smoked or airfried and bloody banging. Perfect snack for parties, gameday or a good option instead of the 700gm packet of Doritos. If you can’t be arsed dealing with piping cheese cheese to the slice jalapeños, knock the stem end off and core them out, then dip in bread crumbs once stuffed to slow down leakage. INGREDIENTS: - Biggest jalapeños you can find (want girth over length) - chow size cheese chipolatas - 1/2 lime rind - 1 block (round thing) sour cream and chives cream cheese - 2-3 tbsp pickle juice - streaky bacon or prosciutto (if you use prosciutto use your BBQ rub sparingly as it can be over seasoned) - hot honey (like Blazed) - 1/4 cup freshly grated sharp cheddar - homemade or store bought ranch (to dip in) - 1.5 tbsp Oz Dirt BBQ rub (or your fave rub) METHOD Cream cheese filling; 1) in a bowl thoroughly beat the shit out of sour cream and chives cream cheese, grated cheese, pickle juice, BBQ rub and lime rind. Spoon that into a ziplock bag, so you can pipe it into the jalapeños 2) slice jalapeños lengthwise then use a teaspoon to scoop out pith and seeds. Place seeds in a damp paper towel, then into ziplocks for 3-5 days until they start to sprout. Then plant them 3) pipe cream cheese mix into jalapeños 4) slice chow size chiplotas lengthwise and place ontop of cream cheese 5) wrap and bacon or prosciutto and pin down with tooth picks. Just pin them in from the sides because if you go too down, you can get some leakage 6) brush top with hot honey and a light coat of BBQ rub 7) can be airfried until bacon crispy (make sure you place foil in there to keep them upright as they can fall over when closing the draw etc. I smoke mine on the kettle. 8) I used a kettle kone in the middle of the kettle on the bottom grate, dump in approx 1/2 lit chimney of charcoal in it, top grate back on, then cherry wood over the top for smoke 9) arrange poppers around the perimeter 10) rotate lid every 5 mins 90 degrees to get even smoke distribution 11) once bacon starts to take colour and get crispy, hit with another light brush of hot honey 12) they shouldn’t be to spicy for ya, but if so dip into some ranch sauce or aioli #aussieqbbq #bbq #weberkettle #poppers #jalapenopoppers #food #grilling #airfryer #airfried
