Nonna Maria’s Garlic Chicken Serves 4 people - Recipe Below ⬇️ If there is a meal in our family that everyone loves it’s this chicken. This is a staple recipe of Nonna Maria. She made this all the time. Whether it was a sunday dinner, weekday dinner or family party. The smell and taste bring us back to her kitchen. It is so simple but the flavor is so delicious. Ingredients: 6 chicken legs (small) clean and skinned Marinade 5-6 garlic cloves, sliced 1 teaspoon salt 1 tablespoon dry mint 1 tablespoon dry parsley 1 tablespoon dry thyme 1 cup olive oil For breadcrumbs: 1 cup unseasoned breadcrumbs 1 cup whole wheat panko breadcrumbs Repeat herbs from marinade for breadcrumbs 2 small garlic cloves ½ cup pecorino romano cheese Directions: In a small bowl add garlic and salt. Using a mortar, smash together. Add the dry parsley, mint, and Thyme. Smash all together to wake up the dry herbs. Pour in the olive oil and stir to combine. Place the chicken in a large bowl, pour marinade over the chicken and message until pieces are generously covered. Cover the bowl in plastic wrap and let the chicken marinate in the refrigerator for at least 30 minutes. The longer it stays the better it is. All those flavors will be absorbed by the chicken. In a shallow bowl add the two breadcrumbs, dry herbs, cheese and garlic. Stir to combine. Preheat oven 400 Drizzle olive oil to a baking sheet. Working with one piece at a time, dredge through the breadcrumb, pressing gently to adhere. Place the coated chicken on a baking sheet as you work. Bake in the oven at 400 degrees btween 35-40 min. After 20 minutes it should be golden brown at the bottom. Turn it over and finish cooking on the other side for 15-20min. If its golden brown after 15 minutes take it out. You do not want it to burn.
