Vanilla extract ½ Cup crumbled Cinnamon Toast Crunch™ for topping In a small bowl combine the Cinnamon Toast Crunch™ and milk and let that sit for 10 min. so that the milk is infused. Then pass through a strainer keeping only your milk and all that flavor. Combine together the flour, sugar, baking powder and salt in a large-sized bowl. Then add the Cinnamon Toast Crunch™ infused milk, slightly cooled melted butter, vanilla and egg. Mix together until smooth (should have a few lumps). Set aside. Make your platanos en tentacion: Melt the butter in a large saute pan over medium heat, then add in your brown sugar and stir and let this bubble. Then add in your plantains, cinnamon and vanilla. Cook for a few minutes, flipping them often, then add in 2 tbsp. of rum and using a lighter, carefully ignite it and flambé. You can also use water instead. Once it goes out, your platanos are ready, set aside. Heat a nonstick pan or griddle over low-medium heat and add a little butter to lightly grease the pan. Pour ¼ cup of batter onto the pan and spread out gently into a round shape with the back of your ladle or measuring cup. After about 3 minutes or when bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter. Now stack a few on a plate and top with your platanos en tentacion and Cinnamon Toast Crunch™.
