Stuffed Calamari (recipe below) ⬇️ ⬇️⬇️🦑🦑 For sauce: 2 garlic cloves Olive oil 1 can Tomato peeled crushed 1/3 cup red wine Salt and pepper Stuffing: Olive olive 2 small shallots 2 frying peppers (red and yellow) 1 bulb of fennel 2 garlic cloves Pinch of saffron 1 cup aborio rice 1/2 cup white wine 6 tablespoons of the sauce you made 1 cup water Directions: In a pan add olive oil, sauté garlic cloves then add the peeled tomato. Add in the wine and salt. Looser the flame and make it simmer. Then start on stuffing. In a medium pot add olive oil to bottom, add in shallots, peppers, fennel, garlic, add in some olive oil and mix together. Add the rice, saffron, chopped calamari tentacles. Let the tentacles cook alittle. Add in white wine, Then add the tablespoons on sauce. Mixx mix until the wine reduces. Mix mix. Now add in water to the rice so the rice can cook and all absorbed. Add the parsley towards the end. Let the rice cool alittle bit, then stuff the calamari. Close each calamari with a toothpick. In a baking sheet add sauce to the bottom. Add the calamari and then pour the rest of the sauce on top.
