My Nonna Rosa (my dads mom) who lived in Italy made this delicious chicken dish. My nonna Rosa was the funniest person, I truly believe I got my silliness from her. Even when she was old and her mind wasn’t the same anymore she never lost her sense of humor. She was a damn good cook too. I loved honoring her through this dish🤍 RECIPE ⬇️ Ingredients: 6 chicken legs 5 potatoes 3 zucchini 1 large onion 10 ounces grape tomatoes 5-6 cloves of garlic Olive oil Salt and pepper A couple of tablespoons Oregano A few bay leaves Breadcrumbs (to sprinkle) Directions: Slice potatoes, zucchini and red onion and add to pan. Season it with salt, pepper and oregano. Add olive oil all over and mix around. Add the chicken legs on top. Add the tomatoes, and then more salt and oregano on top of chicken. Add three bay leaves. Chop garlic and sprinkle on top. Then sprinkle the breadcrumbs on top, coating the chicken. Drizzle more olive oil all over chicken.
