Easy cucumber kimchi salad recipe! This is a perfect side dish and it’s so refreshing. Super easy to make and lasts up to a week in the fridge. Ingredients: 8 Persian cucumbers 1/2 white onion 1/2 carrot, julienned 1 tbsp garlic 3 green onions 1/2 tsp salt 3 tbsp soy sauce 1 tbsp fish sauce 3 tbsp gochugaru 3 tbsp rice wine vinegar 2 tbsp sugar 1 tbsp sesame oil 1 tbsp sesame seeds Cut the cucumbers into half inch slices then add salt to the cucumbers and let it sit for about 20 minutes then drain out the excess liquid. Thinly slice onions and carrots. Cut green onion into 1 inch pieces. Add the vegetables to the cucumber then add minced garlic, soy sauce, fish sauce, gochugaru, rice wine vinegar, sugar, sesame oil and sesame seeds. Easy cucumber kimchi salad recipe! This is a perfect side dish and it’s so refreshing. Super easy to make and lasts up to a week in the fridge. Ingredients: 8 Persian cucumbers 1/2 white onion 1/2 carrot, julienned 1 tbsp garlic 3 green onions 1/2 tsp salt 3 tbsp soy sauce 1 tbsp fish sauce 3 tbsp gochugaru 3 tbsp rice wine vinegar 2 tbsp sugar 1 tbsp sesame oil 1 tbsp sesame seeds Cut the cucumbers into half inch slices then add salt to the cucumbers and let it sit for about 20 minutes then drain out the excess liquid. Thinly slice onions and carrots. Cut green onion into 1 inch pieces. Add the vegetables to the cucumber then add minced garlic, soy sauce, fish sauce, gochugaru, rice wine vinegar, sugar, sesame oil and sesame seeds. Perfect way to use up the veggies in your fridge! This soup is packed with vegetables and nutrients to keep you healthy and thriving all winter long. 🍅🥒🥕🧅🧄🌶️🫑 Roasted Veggie Soup Ingredients: 1 large Red Onion, sliced into 4 pieces 2 Garlic Bulbs, top sliced off 1 Bell Pepper, sliced in half and seeds removed 3 Large Carrots 5 Roma Tomatoes  2 Zucchinis 3 tbsps Olive Oil 1 teaspoon Salt 1/2 teaspoon Pepper  1 tablespoon Italian Seasoning 1 teaspoon Red Pepper Flakes 5 cups Vegetable Broth 1 can of Full Fat Coconut Milk 1 cup Red Lentils, rinsed (optional) How to make it: 1. Add all the chopped veggies, herbs, and olive oil to a parchment lined baking sheet. 2. Bake at 400 F for about 40 minutes. 3. Blend baked veggies with broth in a blender, then transfer to a pot. 4. Add vegetable broth and coconut milk. 5. Optional: Add rinsed lentils for extra protein. Looking to lose weight & eat more veggies? like I always say- make your veggies CRAVE worthy so you actually enjoy them! 😍 I LOVE having this as a side to a chunky veggie soup, or a creamy tomato soup! 🥣 Ingredients Makes around 12 sweet potato bites ( Calories per bite: 41,5; Carbs:4.5g; fiber:0.7g; Protein:2g; Fats:1.8g) 2 sweet potatoes 1/3 cup mozzarella Sea salt & oregano to taste 👩‍🍳 Method: slice your sweet potatoes into coins. Spray with oil spray and bake at 180C for 20-30 minutes. Once cooked through, add your mozzarella, sea salt & oregano.
