Did you know you can make Fritters with any veggies you have in your fridge?? They’re perfect when you have leftover vegetables that need to be used up so you can really mix and match the veggies you add! Here I’ve used zucchini, potato, carrots, capsicum and green onions. Some other vegetables that would also be great include broccoli, sweet potatoes, asparagus and even peas and corn. You’ll need: 650 grams mixed veggies (make sure to squeeze out any liquid from water vegetables such as zucchini and potatoes) 1 egg 3/4 cup chickpea flour (add more if the batter is too wet) Handful parsley 1 tsp garlic powder Salt and pepper Feta cheese to add on top Olive oil spray Rather than frying the fritters, here I’ve baked them using Glad to be Green® Compostable Bake Paper.
