Episode 2 | Christmas Sides ๐ Stuffing & cranberry sauce ๐ฅ Serves 12 or more 1 tbsp butter 1 tbsp olive oil 2 large onions, diced 1 tbsp sage leaves, chopped 2 large sprigs of thyme, leaves chopped 8 garlic cloves, minced 540g chestnuts, chopped 2kg sausage meat 190g bread, roughly chopped 2 eggs Grating of nutmeg Small pinch of ground cinnamon Small pinch of ground clove Zest and juice of 1 orange Salt and pepper to taste 1. Saute the onions in the butter and oil for 10 minutes until starting to brown. Add in the garlic, chestnuts and herbs, and cook for another 10 minutes over a medium heat. 2. Add the sausage meat into a bowl with the remaining ingredients, then add the cooked chestnut mixutre. Mix thoroughly until all combined and โpaste likeโ. 3. You can then either cook the stuffing inside of your chicken / turkey, or alternatively place it into a pan / roasting tray and roast in the oven at 200 degrees C for 30-40 minutes until cooked through and golden brown on top. If stuffing inside a turkey, secure the legs together to prevent the stuffing from spilling out of the cavity. I love to split the stuffing in half and cook it both ways. Enjoy! 170g sugar 600g cranberries Large pinch of salt 400ml water Zest of 1 orange Juice of 1 orange Splash of port (optional) Sprig of rosemary 1 stick of cinnamon Grating of nutmeg 1. Add all the ingredients into a saucepan, bring to boil then cover and cook over a medium heat for 7-8 minutes. Remove the rosemary then take lid off and cook another 15-20 minutes on medium low heat. Crush some of the cranberries with the back of a spoon to thicken the sauce.
