Chicken rice bowl with a delicious chopped salad This is one of the easiest yet most delicious dishes to make and It comes together in no time. In a large bowl mix together the olive oil, lemon juice, plain yogurt, garlic, the spices and cilantro. Add in the chicken breasts mix and marinate for about an hour or longer if you have the time. 2. Turn the oven on to 400°, place the marinaded chicken breasts on a tray lined with parchment paper and bake for 35 to 40 minutes or until the internal temperature reaches 165°. Once done let it rest for 5 minutes, then slice. 3. Make the salad- get your fullstar chopper out and start chopping the salad with ease, chop all the vegetables then add it in a bowl, next add in the cilantro, EVOO, lemon juice, salt and pepper to taste and mix. 4. Once everything is done serve over yellow rice and enjoy!
