The long awaited Lasagna Soup! 🍝 I’m finally getting around to making this viral soup and WOWWW it’s insanely good! It honestly might be my favorite soup of the series! Let me know if you make it! Here’s how: 1/2 yellow onion, diced (about a cup) 6-8 cloves minced garlic, to taste 1/2 lb hot or mild Italian sausage (I used hot) 1/2 lb lean ground beef 2 T tomato paste Salt and pepper to taste 1-2 t Tony’s Seasoning, to taste 1 t dried basil 1 t dried parsley 1 t dried oregano 1 t Italian seasoning 1/2 t red pepper (to taste) 24 oz marinara 1/2 cup heavy cream 4-6 cups chicken stock, depending on how soupy you want it 1/2 lb Laguna noodles, broken into pieces Handful of fresh basil 1 cup parm 1 cup ricotta 1 cup mozzarella 1/4 cup fresh parsley Salt and pepper to taste 1. In a medium bowl, combine your parm, ricotta, mozzarella, parsley, salt and pepper. Set aside. 2. In a large soup pot or dutch oven, heat your olive oil over medium heat. Add in your onion, add a pinch of salt, and cook for 4 minutes. Throw in your garlic and cook until fragrant, about 30 seconds. 3. Add in your sausage and beef, breaking into pieces with a wooden spoon. Cook for a few minutes and then season with your salt, pepper, basil, oregano, parsley, Italian, red pepper, and Tony’s. Cook until no longer pink. 4. Add in your tomato paste and stir. Cook for a couple minutes. Pour in your chicken broth and marinara. Bring to a boil. 5. Pour in your lasagna pieces, reduce heat, and simmer for about 10 minutes, or until al dente, stirring occasionally. 6. Once your noodles are done, add in your heavy cream and fresh basil (torn). Adjust seasonings if needed. Stir, serve, and top with a dollop of your ricotta mixture. Soup Series Part 1: Marry Me Chicken Noodle Soup 💍❤️ Ingredients: 3 large carrots, chopped 3 celery stalks, chopped 1 yellow onion, chopped 1 small parsnip, chopped 1/4 cup white wine 1 tbsp butter 8 garlic cloves, minced 6 tbsp tomato paste 6 tsp chicken bouillon 6 cups water 1/2 lb noodle of choice, cooked (I like small thick noodle for this recipe so l used tubetti rigati) 1 lb chicken (or 2 chicken breasts). You can also use rotisserie chicken if you want to skip cooking the chicken. 1 tbsp avocado oil (for cooking chicken) 4-5 tbsp chopped sun dried tomatoes (I used ones from a jar) 1 tbsp of oil from the sun dried tomato jar 1 tsp Italian seasoning 1/2 tsp dried parsley 1/2 tsp dried oregano 1/2 tsp dried basil 1/2 tsp salt 1/2 tsp pepper 1/2 tsp red pepper flakes 3/4 cup cream handful fresh parsley, chopped handful of fresh basil, chopped freshly grated parmesan cheese, to top Method: Slice chicken breasts in half and season. I used salt, pepper, garlic powder, and onion powder. In a large pot, cook chicken in avocado oil over medium high heat until cooked all the way through (I do about 3-4 min each side). Set aside and chop into bite size pieces. In a separate pot, boil some water and cook your pasta according to package (al dente). Strain and set aside. In the same pot you used to cook chicken, heat up 1 tbsp sun dried tomato oil over medium heat. Once your pan is hot, add onions and sauté for a minute or so before adding in the white wine. Deglaze the pan (scrape the bottom and let the wine cook off). Add in celery, carrots, and parsnip. Sprinkle a little salt on the veggies. Saute for about 5 min or until they start to soften. Create a space in the pan, add the butter and garlic directly into the butter. Cook for another minute, stirring so it does not burn. Add in tomato paste. Stir in and let cook for a few minutes or until the tomato paste starts to turn a slightly darker color before stirring in sun dried tomatoes and chicken bouillon. Add water and seasonings (salt, pepper, Italian seasoning, dried parsley, dried basil, dried oregano, red pepper flakes). Bring to a boil, reduce to a simmer, cover, and let cook for about 10 min. Add in your butter and onion, sautéing for about 5 minutes or until your onions soften. Throw in your garlic and cook for about 30s or until fragrant. 3. Add in your flour and stir for about 1min 4. Slowly whisk in your heavy cream and milk, working in batches (about a 1/3 at a time). Repeat with your chicken broth. Season with your salt, pepper, chicken bouillon, and cayenne. Stir to combine. 5. Add in your potatoes and bring to a boil. Boil until fork tender, about 15 minutes. 6. Reduce heat to medium-low. Add in your cheddar cheese and bacon (leaving aside a few T of each for topping), stir until melted. 7. With a potato masher, immersion blender or whatever you have on hand, mash your potatoes until desired consistency. 8. Serve immediately and top with more cheese, sour cream, bacon, and green onions. Creamy Chicken Noodle Soup with Potatoes 🤩 I saw @Alyssa Alonso make a version of this last year, and I’ve been making this ever since. Here’s how:
 2 T butter 2 T olive oil 2 chicken breasts, seasoned 1/2 large yellow onion, diced 3 stalks celery, diced 2-3 large carrots, diced 1 T Italian seasoning 1 tsp red pepper flakes, to taste
Salt and pepper, to taste 8-10 cloves garlic, minced
1/2 cup dry white wine, optional 6 cups chicken broth 2-3 cups diced Yukon gold potatoes 1-2 tsp chicken boullion, optional 1 Parmesan rind, optional 1 bay leaf 1/2 - 1 cup heavy cream, to taste Juice of 1/2 lemon 1/4 cup fresh parsley, to taste 2 T fresh dill, to taste 1 T fresh rosemary, to taste 1 T fresh thyme, to taste
1 lb egg noodles, cooked separately
 Garnish: Freshly grated Parmesan, lemon juice, fresh dill, black pepper, red pepper, olive oil 1. Cook the egg noodles in salted water according to package instructions. Drain and set aside. 
2. In a large soup pot or Dutch oven, heat 1 tbsp butter and 1 tbsp olive oil over medium-high heat. Sear the chicken breasts on both sides until golden, about 3-4 minutes per side, then remove them from the pot and set aside. 3. Add the remaining olive oil and butter to the pot. Lower the heat to medium, then add the onion, celery, and carrot. Season with salt, pepper, Italian seasoning, and red pepper flakes (if using), and sauté for 5-7 minutes until the vegetables are softened. 4. Add the garlic and cook for another 30 seconds until fragrant. Pour in the wine, if using, stir and let simmer for 2 minutes. 5. Pour in the chicken broth, season with salt and pepper. 
6. Add the diced potatoes, chicken bouillon, Parmesan rind, and bay leaf. Stir to combine, then return the seared chicken breasts to the pot. 7. Bring the mixture to a boil and simmer for 15-20 minutes, until the potatoes are fork-tender. 8. Remove the chicken breasts from the pot, shred them using two forks, and set aside. 9. Check the potatoes to ensure they’re done, then remove the Parmesan rind and bay leaf. 10. Stir in the heavy cream and lemon juice, followed by the parsley, dill, rosemary, and thyme. 11. Return the shredded chicken to the pot, taste for seasoning, and adjust as needed. 12. Serve the soup over the cooked egg noodles, topping each bowl with additional Parmesan, lemon juice, black pepper, red pepper flakes, dill, and a drizzle of olive oil. Creamy Tortellini Sausage Soup 🎃 This was the first recipe of my fall soup series last year, and I’m back with an even better version! Here’s how to make it: 1 tbsp unsalted butter 1 tbsp olive oil (I use @Brightland rosemary)
1 lb Italian Sausage⁣, hot or mild
1 medium yellow onion⁣, finely diced
1/2 cup celery, finely diced 1/2 cup carrot, finely diced
6-8 cloves garlic, minced, to taste
1-2 tsp Italian Seasoning⁣, to taste
Salt and black pepper, to taste
1 tsp red chili flakes, to taste 3 tbsp tomato paste
3 tbsp flour⁣
1/2 cup dry white wine⁣
28 oz. crushed tomatoes⁣
4 cups low-sodium chicken broth⁣
Parmesan rind⁣, optional Bay leaf, optional
1/2 cup heavy cream⁣
2 cups spinach⁣

1. In a large pot, heat your olive oil and butter. Add in your onion, celery, carrot, pinch of salt, black pepper, Italian seasoning, and red pepper. Saute for about 5-7 minutes or until tender and beginning to caramelize.⁣ 

2. Add in your Italian sausage and cook until no longer pink. 3. Clear a center in your pot. Add in your tomato paste and let it cook off in the pan for about a minute before incorporating with the rest. Then cook for another 2 minutes. 4. Sprinkle in your flour and stir. Cook for 1-2 minutes to cook out the raw taste. 5. Deglaze with white wine, scraping up any brown bits on the bottom of the pan. Let that cook for about 2 minutes. 6. Pour in your crushed tomatoes and chicken broth. Season with salt and pepper. Stir. 7. Drop in your parmesan rind and bay leaf. Stir and simmer, uncovered, for 20-30 minutes. 

8. Once finished, remove your parmesan rind (if you can find it) and bay leaf. Pour in your tortellini and spinach. Simmer for another 3-4 minutes, until your tortellini is tender. 9. Pour in your cream and parmesan. Stir until creamy. Serve immediately and enjoy!

Here’s how to make it: * 2 tbsp olive oil * 1 medium onion, diced * 2 medium carrots, diced * 2 celery stalks, diced * 8 cloves garlic, minced, to taste * 1 tsp dried oregano * 1 tsp dried thyme * 1 tsp red pepper flakes (optional) * Salt and pepper, to taste * 1 lb ground beef, optional * 2-3 tbsp tomato paste * 6 cups beef broth (can use chicken or vegetable broth if preferred) * 24 oz Rao’s marinara sauce * 2 (15 oz) can cannellini beans, drained and rinsed * 1 bay leaf * 1 parmesan rind (optional) * 1 cup ditalini pasta * 1 bunch or about 2 cups kale, chopped, stems removed * Juice from 1/2 lemon (to taste, plus more for garnish) * Grated Parmesan, for garnish * Fresh chives, chopped, for garnish (or preferred herb) * Freshly cracked black pepper, for garnish * Extra virgin olive oil, for drizzling * Lemon wedges, for serving 1. Broccoli Cheddar Soup! 🥦🧀🥣 This was by far the most suggested soup & you guys were right because it was SO good. If I made this again I would add some potatoes and bacon, but it was delish as is. Let me know your other suggestions for the series! Ingredients 1/4 cup butter 1 medium yellow onion, diced 6 cloves minced garlic (to taste) 1/4 cup flour 2 cups chicken broth 1 large head of broccoli, chopped and rinsed 1/2 cup shredded carrots 1.5t salt 1.5t black pepper 1t chicken bouillon (to taste) 1/2t paprika (smoked would work here too) Pinch of cayenne (about 1/8 teaspoon) Pinch of nutmeg (about 1/8 teaspoon) 2 cups heavy cream or half & half 2.5 cups freshly shredded sharp cheddar (more or less to taste, plus a little extra for topping) Instructions 1. In a large dutch oven, melt butter over medium heat. Add in your onions and cook for a few minutes, or until they begin to soften. Throw in your garlic and stir for another 30seconds, or until fragrant. 2. Add in your flour and stir continuously for 1min. Slowly pour in half of your chicken broth, stir to combine, repeat. Season with your seasonings. 3. Add in your broccoli and carrots. Stir to combine and bring to a simmer. Reduce heat to med/low, cover, and cook for about 10-15minutes or until your veggies are tender. 4. Reduce heat to low and stir in your cream. Simmer for a 3-4 minutes. 5. Add in your cheese and stir until melted. Top with extra cheese and serve with toasted bread. The real, star-shaped pastina ⭐️ After almost a year, I FINALLY found a box of pastina, so naturally I had to pull out all the stops with this one. Here’s how to make it: 4 cups low-sodium chicken broth (use more if you want it soupier) Salt, to taste 1/2 medium onion 1 carrot stick, halved 1 celery stalk, halved 4 cloves garlic, to taste 1/2 - 1 tsp turmeric (for color), optional 1 tbsp butter 1 cup pastina (or any small pasta) 1 egg yolk, optional Freshly grated Parmesan cheese, to taste 1 clove garlic, grated, to taste Fresh lemon juice, to taste (1/2 lemon) Freshly cracked black pepper, for serving Extra virgin olive oil, for drizzling Instructions: 1. In a pot, combine the chicken broth, pinch of salt, onion, carrot, celery, and garlic. Bring to a boil, cover and simmer over medium/low heat for about 20 minutes until the vegetables are tender. 2. Transfer the cooked veggies to a blender, add the turmeric, and a little bit of the broth. Blend until smooth. 3. Add the blended vegetables back into the broth, along with another pinch of salt and 1 tbsp of butter. Stir to combine. 4. Broccoli Cheddar Soup 🥦🧀 Here’s how to make this copycat Panera recipe: Ingredients 1 lb bacon, chopped (reserve some for topping) 2 tbsp butter 2 tbsp bacon fat 1 medium yellow onion, diced Salt and pepper, to taste 1 tsp smoked paprika Dash of cayenne, optional 6-8 cloves garlic, minced (to taste) 1/4 cup flour 2-3 cups chicken broth (start with 2, add more if needed) 2 heads of broccoli, chopped and rinsed 1 cup shredded carrots 1 tsp chicken bouillon (to taste) 2 cups heavy cream or half & half 2 cups freshly shredded sharp cheddar (plus extra for topping) Dash of nutmeg, optional Instructions 1. In a large Dutch oven, cook your bacon over medium heat until crispy. Remove and set aside, leaving about 2 tbsp of bacon fat in the pot.
 2. Add your butter to the pot. Stir in your onions, salt, pepper, paprika, and cayenne. Cook until the onions start to soften, about 5 minutes.
 3. Add in your garlic, stirring for 30 seconds until fragrant.
 4. Sprinkle in the flour and stir well. Cook for about 2 minutes.
 5. Slowly pour in half of your chicken broth, stirring to combine, then add the rest. If the base seems too thick, add in the third cup of broth.
 6. Add in your broccoli, carrots, and chicken bouillon. Stir and bring the soup to a simmer. Cover, reduce heat, and let it simmer for about 10-15 minutes, or until the veggies are tender.
 7. Turn off the heat and pour in your cream, stirring well.
 8. Add in your cheese, stirring until melted.

The long awaited Lasagna Soup! 🍝 I’m finally getting around to making this viral soup and WOWWW it’s insanely good! It honestly might be my favorite soup of the series! Let me know if you make it! Here’s how: 1/2 yellow onion, diced (about a cup) 6-8 cloves minced garlic, to taste 1/2 lb hot or mild Italian sausage (I used hot) 1/2 lb lean ground beef 2 T tomato paste Salt and pepper to taste 1-2 t Tony’s Seasoning, to taste 1 t dried basil 1 t dried parsley 1 t dried oregano 1 t Italian seasoning 1/2 t red pepper (to taste) 24 oz marinara 1/2 cup heavy cream 4-6 cups chicken stock, depending on how soupy you want it 1/2 lb Laguna noodles, broken into pieces Handful of fresh basil 1 cup parm 1 cup ricotta 1 cup mozzarella 1/4 cup fresh parsley Salt and pepper to taste 1. In a medium bowl, combine your parm, ricotta, mozzarella, parsley, salt and pepper. Set aside. 2. In a large soup pot or dutch oven, heat your olive oil over medium heat. Add in your onion, add a pinch of salt, and cook for 4 minutes. Throw in your garlic and cook until fragrant, about 30 seconds. 3. Add in your sausage and beef, breaking into pieces with a wooden spoon. Cook for a few minutes and then season with your salt, pepper, basil, oregano, parsley, Italian, red pepper, and Tony’s. Cook until no longer pink. 4. Add in your tomato paste and stir. Cook for a couple minutes. Pour in your chicken broth and marinara. Bring to a boil. 5. Pour in your lasagna pieces, reduce heat, and simmer for about 10 minutes, or until al dente, stirring occasionally. 6. Once your noodles are done, add in your heavy cream and fresh basil (torn). Adjust seasonings if needed. Stir, serve, and top with a dollop of your ricotta mixture. Soup Series Part 1: Marry Me Chicken Noodle Soup 💍❤️ Ingredients: 3 large carrots, chopped 3 celery stalks, chopped 1 yellow onion, chopped 1 small parsnip, chopped 1/4 cup white wine 1 tbsp butter 8 garlic cloves, minced 6 tbsp tomato paste 6 tsp chicken bouillon 6 cups water 1/2 lb noodle of choice, cooked (I like small thick noodle for this recipe so l used tubetti rigati) 1 lb chicken (or 2 chicken breasts). You can also use rotisserie chicken if you want to skip cooking the chicken. 1 tbsp avocado oil (for cooking chicken) 4-5 tbsp chopped sun dried tomatoes (I used ones from a jar) 1 tbsp of oil from the sun dried tomato jar 1 tsp Italian seasoning 1/2 tsp dried parsley 1/2 tsp dried oregano 1/2 tsp dried basil 1/2 tsp salt 1/2 tsp pepper 1/2 tsp red pepper flakes 3/4 cup cream handful fresh parsley, chopped handful of fresh basil, chopped freshly grated parmesan cheese, to top Method: Slice chicken breasts in half and season. I used salt, pepper, garlic powder, and onion powder. In a large pot, cook chicken in avocado oil over medium high heat until cooked all the way through (I do about 3-4 min each side). Set aside and chop into bite size pieces. In a separate pot, boil some water and cook your pasta according to package (al dente). Strain and set aside. In the same pot you used to cook chicken, heat up 1 tbsp sun dried tomato oil over medium heat. Once your pan is hot, add onions and sauté for a minute or so before adding in the white wine. Deglaze the pan (scrape the bottom and let the wine cook off). Add in celery, carrots, and parsnip. Sprinkle a little salt on the veggies. Saute for about 5 min or until they start to soften. Create a space in the pan, add the butter and garlic directly into the butter. Cook for another minute, stirring so it does not burn. Add in tomato paste. Stir in and let cook for a few minutes or until the tomato paste starts to turn a slightly darker color before stirring in sun dried tomatoes and chicken bouillon. Add water and seasonings (salt, pepper, Italian seasoning, dried parsley, dried basil, dried oregano, red pepper flakes). Bring to a boil, reduce to a simmer, cover, and let cook for about 10 min. In a large pot or dutch oven, cook bacon over medium heat until crispy. Remove with a slotted spoon and set aside. *Carefully* soak up the bacon grease with a paper towel, leaving about 2T behind. 2. Add in your butter and onion, sautéing for about 5 minutes or until your onions soften. Throw in your garlic and cook for about 30s or until fragrant. 3. Add in your flour and stir for about 1min 4. Slowly whisk in your heavy cream and milk, working in batches (about a 1/3 at a time). Repeat with your chicken broth. Season with your salt, pepper, chicken bouillon, and cayenne. Stir to combine. 5. Add in your potatoes and bring to a boil. Boil until fork tender, about 15 minutes. 6. Reduce heat to medium-low. Add in your cheddar cheese and bacon (leaving aside a few T of each for topping), stir until melted. 7. With a potato masher, immersion blender or whatever you have on hand, mash your potatoes until desired consistency. 8. Serve immediately and top with more cheese, sour cream, bacon, and green onions. Creamy Chicken Noodle Soup with Potatoes 🤩 I saw @Alyssa Alonso make a version of this last year, and I’ve been making this ever since. Here’s how:
 2 T butter 2 T olive oil 2 chicken breasts, seasoned 1/2 large yellow onion, diced 3 stalks celery, diced 2-3 large carrots, diced 1 T Italian seasoning 1 tsp red pepper flakes, to taste
Salt and pepper, to taste 8-10 cloves garlic, minced
1/2 cup dry white wine, optional 6 cups chicken broth 2-3 cups diced Yukon gold potatoes 1-2 tsp chicken boullion, optional 1 Parmesan rind, optional 1 bay leaf 1/2 - 1 cup heavy cream, to taste Juice of 1/2 lemon 1/4 cup fresh parsley, to taste 2 T fresh dill, to taste 1 T fresh rosemary, to taste 1 T fresh thyme, to taste
1 lb egg noodles, cooked separately
 Garnish: Freshly grated Parmesan, lemon juice, fresh dill, black pepper, red pepper, olive oil 1. Cook the egg noodles in salted water according to package instructions. Drain and set aside. 
2. In a large soup pot or Dutch oven, heat 1 tbsp butter and 1 tbsp olive oil over medium-high heat. Sear the chicken breasts on both sides until golden, about 3-4 minutes per side, then remove them from the pot and set aside. 3. Add the remaining olive oil and butter to the pot. Lower the heat to medium, then add the onion, celery, and carrot. Season with salt, pepper, Italian seasoning, and red pepper flakes (if using), and sauté for 5-7 minutes until the vegetables are softened. 4. Add the garlic and cook for another 30 seconds until fragrant. Pour in the wine, if using, stir and let simmer for 2 minutes. 5. Pour in the chicken broth, season with salt and pepper. 
6. Add the diced potatoes, chicken bouillon, Parmesan rind, and bay leaf. Stir to combine, then return the seared chicken breasts to the pot. 7. Bring the mixture to a boil and simmer for 15-20 minutes, until the potatoes are fork-tender. 8. Remove the chicken breasts from the pot, shred them using two forks, and set aside. 9. Check the potatoes to ensure they’re done, then remove the Parmesan rind and bay leaf. 10. Stir in the heavy cream and lemon juice, followed by the parsley, dill, rosemary, and thyme. 11. Return the shredded chicken to the pot, taste for seasoning, and adjust as needed. 12. Serve the soup over the cooked egg noodles, topping each bowl with additional Parmesan, lemon juice, black pepper, red pepper flakes, dill, and a drizzle of olive oil. Creamy Tortellini Sausage Soup 🎃 This was the first recipe of my fall soup series last year, and I’m back with an even better version! Here’s how to make it: 1 tbsp unsalted butter 1 tbsp olive oil (I use @Brightland rosemary)
1 lb Italian Sausage⁣, hot or mild
1 medium yellow onion⁣, finely diced
1/2 cup celery, finely diced 1/2 cup carrot, finely diced
6-8 cloves garlic, minced, to taste
1-2 tsp Italian Seasoning⁣, to taste
Salt and black pepper, to taste
1 tsp red chili flakes, to taste 3 tbsp tomato paste
3 tbsp flour⁣
1/2 cup dry white wine⁣
28 oz. crushed tomatoes⁣
4 cups low-sodium chicken broth⁣
Parmesan rind⁣, optional Bay leaf, optional
1/2 cup heavy cream⁣
2 cups spinach⁣

1. In a large pot, heat your olive oil and butter. Add in your onion, celery, carrot, pinch of salt, black pepper, Italian seasoning, and red pepper. Saute for about 5-7 minutes or until tender and beginning to caramelize.⁣ 

2. Add in your Italian sausage and cook until no longer pink. 3. Clear a center in your pot. Add in your tomato paste and let it cook off in the pan for about a minute before incorporating with the rest. Then cook for another 2 minutes. 4. Sprinkle in your flour and stir. Cook for 1-2 minutes to cook out the raw taste. 5. Deglaze with white wine, scraping up any brown bits on the bottom of the pan. Let that cook for about 2 minutes. 6. Pour in your crushed tomatoes and chicken broth. Season with salt and pepper. Stir. 7. Drop in your parmesan rind and bay leaf. Stir and simmer, uncovered, for 20-30 minutes. 

8. Once finished, remove your parmesan rind (if you can find it) and bay leaf. Pour in your tortellini and spinach. Simmer for another 3-4 minutes, until your tortellini is tender. 9. Pour in your cream and parmesan. Stir until creamy. Serve immediately and enjoy!

Here’s how to make it: 3 lb mini Yukon gold potatoes, cut into 1” pieces 1 lb bacon, cut into small pieces (reserve a few tbsp for topping) 2 tbsp butter 2 tbsp reserved bacon grease 1 medium yellow onion, diced 8-10 cloves garlic, minced, to taste 1/4 cup flour 2 cups milk 1 cup heavy cream 4 cups chicken broth Salt and black pepper, to taste 1 tsp chicken bouillon (optional) Pinch of cayenne pepper (optional) 2 cups freshly shredded cheddar cheese, plus more for topping Toppings: Cheddar cheese, sour cream, bacon, and green onions Instructions 1. In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove and set aside. Carefully soak up the excess bacon grease with a paper towel (or save for later) leaving about 2 tbsp behind in the pot. 2. Add the butter and diced onion to the pot, sautéing for about 5 minutes or until the onion softens. Stir in the minced garlic and cook for about 30 seconds, or until fragrant. 3. Add the flour and stir. Cook for about 1-2 minutes. 4. Slowly whisk in the heavy cream and milk in batches (about 1/3 at a time), followed by the chicken broth. 5. Season with salt, pepper, chicken bouillon, and cayenne. Stir well to combine. 6. Add the potatoes to the pot and bring the mixture to a boil. Either way, just make sure to add plenty of parmesan and lemon! Here’s how to make it: * 2 tbsp olive oil * 1 medium onion, diced * 2 medium carrots, diced * 2 celery stalks, diced * 8 cloves garlic, minced, to taste * 1 tsp dried oregano * 1 tsp dried thyme * 1 tsp red pepper flakes (optional) * Salt and pepper, to taste * 1 lb ground beef, optional * 2-3 tbsp tomato paste * 6 cups beef broth (can use chicken or vegetable broth if preferred) * 24 oz Rao’s marinara sauce * 2 (15 oz) can cannellini beans, drained and rinsed * 1 bay leaf * 1 parmesan rind (optional) * 1 cup ditalini pasta * 1 bunch or about 2 cups kale, chopped, stems removed * Juice from 1/2 lemon (to taste, plus more for garnish) * Grated Parmesan, for garnish * Fresh chives, chopped, for garnish (or preferred herb) * Freshly cracked black pepper, for garnish * Extra virgin olive oil, for drizzling * Lemon wedges, for serving 1. In a large pot, heat olive oil over medium heat. Add the onions, carrots, and celery. Season with salt, pepper, oregano, thyme, and red pepper flakes. Sauté for 6-8 minutes until softened. 2. Add in your garlic and cook for another 30 seconds. 3. Clear a center in your pot and add the ground beef. Season with more salt and pepper, and cook until browned, breaking it up as it cooks, about 5-7 minutes. 4. Stir in the tomato paste and cook for another 1-2 minutes to caramelize it slightly. 5. Add the broth, marinara, beans, bay leaf, and parmesan rind. Stir everything together, bring to a boil, and then lower to a simmer. Let it simmer for about 30 minutes, uncovered, stirring occasionally to develop the flavors. 6. After 30 minutes, add the ditalini pasta and cook for 8-10 minutes, until al dente. 7. In the last 5 minutes of cooking the pasta, stir in the chopped kale. Allow it to wilt and soften into the soup. 8. Stir in fresh lemon juice to taste, adjusting seasoning with more salt and pepper if needed. 9. Broccoli Cheddar Soup! 🥦🧀🥣 This was by far the most suggested soup & you guys were right because it was SO good. If I made this again I would add some potatoes and bacon, but it was delish as is. Let me know your other suggestions for the series! Ingredients 1/4 cup butter 1 medium yellow onion, diced 6 cloves minced garlic (to taste) 1/4 cup flour 2 cups chicken broth 1 large head of broccoli, chopped and rinsed 1/2 cup shredded carrots 1.5t salt 1.5t black pepper 1t chicken bouillon (to taste) 1/2t paprika (smoked would work here too) Pinch of cayenne (about 1/8 teaspoon) Pinch of nutmeg (about 1/8 teaspoon) 2 cups heavy cream or half & half 2.5 cups freshly shredded sharp cheddar (more or less to taste, plus a little extra for topping) Instructions 1. In a large dutch oven, melt butter over medium heat. Add in your onions and cook for a few minutes, or until they begin to soften. Throw in your garlic and stir for another 30seconds, or until fragrant. 2. Add in your flour and stir continuously for 1min. Slowly pour in half of your chicken broth, stir to combine, repeat. Season with your seasonings. 3. Add in your broccoli and carrots. Stir to combine and bring to a simmer. Reduce heat to med/low, cover, and cook for about 10-15minutes or until your veggies are tender. 4. Reduce heat to low and stir in your cream. Simmer for a 3-4 minutes. 5. Add in your cheese and stir until melted. Top with extra cheese and serve with toasted bread. Here’s how to make it: 4 cups low-sodium chicken broth (use more if you want it soupier) Salt, to taste 1/2 medium onion 1 carrot stick, halved 1 celery stalk, halved 4 cloves garlic, to taste 1/2 - 1 tsp turmeric (for color), optional 1 tbsp butter 1 cup pastina (or any small pasta) 1 egg yolk, optional Freshly grated Parmesan cheese, to taste 1 clove garlic, grated, to taste Fresh lemon juice, to taste (1/2 lemon) Freshly cracked black pepper, for serving Extra virgin olive oil, for drizzling Instructions: 1. In a pot, combine the chicken broth, pinch of salt, onion, carrot, celery, and garlic. Bring to a boil, cover and simmer over medium/low heat for about 20 minutes until the vegetables are tender. 2. Transfer the cooked veggies to a blender, add the turmeric, and a little bit of the broth. Blend until smooth. 3. Add the blended vegetables back into the broth, along with another pinch of salt and 1 tbsp of butter. Stir to combine. 4. Pour in your pastina and simmer (uncovered) for about 8 minutes, stirring occasionally, until the pasta is al dente. 5. Once the pasta is cooked, turn the heat off.
