I know this doesn’t replace good lasagna, but I’m always looking for fun, delicious ways to make healthy food taste amazing. Because veggies can’t be something you tolerate, they have 2B something you crave! I love getting creative and finding ways to make comfort food more satisfying. And as a person who likes to eat a lot, veggies are honestly just the best. recipe below and so many more yummy ones like this in my new cookbook, Love The Food That Loves You Back (link in bio & amazon https://amzn.to/3NsKjQs ) 😁❤️😋🤤 Cauliflower Lasagna: Makes 1 lasagna serving 1 head cauliflower, sliced in slabs (you should get at least 3-4 good ones. 3/4 cup marinara or tomato sauce (shoutout to @pizzagirl - her stuff is so good) 1/2 cup part skim shredded cheese 1/4 cup ricotta (light or reduced fat works too) 2 eggs 1/2 cup whole wheat breadcrumbs garlic powder, onion powder, oregano, salt, and pepper preheat oven to 375°. Line of baking sheet with parchment paper and spray with oil. whisk two eggs in a bowl and drench the cauliflower slabs in it. in a separate bowl, season your breadcrumbs with the garlic powder, onion powder, salt, pepper, and oregano. Once the cauliflower is dredged in the egg, shake off the excess, and dip both sides in breadcrumbs. Place on a baking sheet and spray the top with oil as well. bake for about 35-40 minutes- or until nice and fork tender. once it’s ready layer with ricotta, tomato sauce and cheese, for as many layers as you’d like. Then bake, uncovered for an additional 15 or so minutes until the cheese is hot and bubbly and cooked through.
