No-Bloating Afternoon Snack 🧡 (full recipe below) I was looking for a satisfying date muffin recipe lately, and I came up with this date muffin recipe that has the same texture as a banana bread (and who doesn’t LOVE banana bread), while still providing the no-bloat benefit I usually go for. The combination of spiced oats, and salted-caramel date spread in this recipe makes this the perfect afternoon snack that won’t leave you feeling bloated, and heavy. This would be the ideal recipe if constipation is something you tend to experience, as the combination of high fibres ingredients like oats & dates may smooth things out in the gut (as long as it’s eaten warm). 1 1/2 cups oat flour 1 1/2 tsp baking soda
1/4 tsp sea salt
1/4 tsp cinnamon powder
1/8 ginger powder + an extra pinch for topping
Wet ingredients:
2 cups dates, pitted
2 tbsp coconut oil
1 cup almond milk
1/2 cup filtered water
1/2 tsp pure vanilla extract
1/4 tsp sea salt
1 egg
Directions:
1. Preheat the oven to 350°F (180°C). Grease the muffin tins with coconut oil. 2. In a medium bowl, add the oat flour, baking soda, salt, and spices. Stir well and set aside. 3. In a blender, add the dates, coconut oil, almond milk, water, vanilla, and salt. Blend until even consistency. 4. In a large bowl, mix the egg, and date spread. 5. In small batches, add the dry ingredients to the wet ingredients, ensuring they integrate in between each batch. 6. Bake for 15-17 minutes. Use a toothpick; the date muffins are ready if it comes out clean.
