If you would like to bump up the protein, feel free to add rotisserie chicken, cooked sausage, or cooked ground meat. Ingredients: 30 ounces cherry tomatoes 4 cloves garlic grated or minced 1 tbsp fresh oregano or 1 tsp dry oregano 1/4 up olive oil 1/2 tsp salt 1/4 tsp pepper 1/4 cup fresh basil 1 cup defrosted and drained frozen peas 3 ounces fresh spinach 1/3 cup grated parmigiano reggiano 13 ounces tortellini 1/3 cup ricotta 1.25 cup shredded mozzarella -Preheat oven to 400F -To a 13X9 baking dish add tomatoes, garlic, oregano, olice oil, salt, and pepper. Mix well then roast in oven for 25 minutes. -Immediately out of the oven, use a potato masher to break down the tomatoes. -Add basil, peas and spinach.
