Papas Con Huevo En Salsa 🇲🇽 Gracias a mi abue this breakfast dish has become one of my favorite comfort meals🖤 👉🏽What you need - 3 Roma Tomatoes - 3 Jalapeños - 1 Serrano - 1 Bay Leaf - 3 Garlic Cloves - 1 Tiny Bunch of Cilantro - 1C Chicken Broth - 2 Medium Sized Yellow Potatoes - 5 Eggs - 1tbsp butter - 1/3C diced onion - Sea Salt + Black Pepper 👉🏽 What to do: In a pot place your tomatoes, peppers, bay leaf, and some sea salt. Cover with water and bring to a boil. While that boils dice your potatoes & place in cold water. This will prevent them from oxidizing while you continue to prep the rest. You can use any type of potato but I prefer yellow as I can skip the peeling with this kind. Remove veggies once the peppers have changed from a bright green to a dull shade. Discard bay leaf. Blend your veggies with garlic, chicken broth and cilantro. Adding salt to taste. Set aside. Whisk your eggs & season with sea salt + black pepper. Heat your pan and melt your butter. Cook your eggs until you have a brown crust over the pieces. Trust me on this one, you don’t want fluffy eggs in this recipe. The egg crust will make all the difference when eating this! Remove cooked eggs & add a tablespoon of neutral oil to the hot pan. Place your drained diced potatoes in the hot pan & mix in your diced onions. Sauté until onions become fragrant. 2-3min Pour in your salsa & reduce your heat to low. Allowing the potatoes to simmer for about 10min or until fork tender. Mix in your cooked eggs and let simmer for another 3-5min.
