[Recipe] - 1 Shallot - 2 Garlic Cloves - 4 tbsp of Butter (1/2 Cold) - Whole & Crushed Peppercorn - 1 1/2 Cup of Beef Stock - 1/4 Cup of Heavy Cream - 1 1/2 tbsp of Corn Stretch - 1/4 Cup of Cognac - Add half of the butter to a med heat saucepot. Mix in peppercorn, being careful not to burn or overcook. - After 2min, mix in shallots and garlic. Cooking approx 5-7min. - Optional: Add in Cognac and reduce. - In a separate bowl, whiskey together the beef stock, heavy cream and corn stratch. - Whisk the mixture into the saucepot.
