Anelletti Al Forno 🥹 Ingredients: 1 pound ground beef. 1 pound ground pork 2 bottles tomato passata 1 onion 1/4 red wine 1 can tomato paste Olive oil Salt 2 pounds Anelletti 2 eggplants 1/2 pound mortadella sliced thick cut in cubes 1/2 Black Forest ham sliced thick cut in cubes 3 hard boiled eggs 2 cups scarmozza 2 cups cacciocavallo (You can substitute with provolone, mozzarella or any cheese you like) Breadcrumbs sprinkle on top. Directions: In a pot add olive oil to the bottom, sauté onions and then add the meat. Brown the meat, make sure to keep mixing so it doesn’t burn. Add the wine, tomato paste and tomato passatta, add water to the jars to grab whatever is left over in the jars and pour in. Add salt and pepper and mix. As soon as the sauce begins to boil, you lower the flame and simmer for 1 hour and half. The last half and hour cooking the sauce you add the peas. Cut eggplants into cubes. Add salt let it sit for atleast 30min. Rinse off the salt, dry eggplant and begin to fry. When the pasta is ready. Mix in the meat sauce, then mix in eggplant, the chopped mortadella, ham, and two cheeses. Add the bottom of a baking pan, add olive oil all over and on the sides. Sprinkle breadcrumbs all over on the sides. Layer the pasta, add the meat sauce, the egg slices. Add another layer of pasta, meat sauce. Sprinkle cheese and breadcrumbs on top. Drizzle olive oil. Bake for 40 minutes. 25 min covered and the last 20 min uncovered.
