Potato Burger Buns 🍔 Ingredients for 9 buns: 370 bread flour 15 g sugar 8 g instant dry yeast 8 g salt 140 g milk, room temp 1 large egg, room temp 50 g unsalted butter, softened and cubed 150 g starchy (or all-purpose) potatoes, boiled, cooled, and riced + 1 egg for egg wash sesame seeds Instructions •Add ingredients, except butter and potatoes, to the bowl of a stand mixer. •Turn your mixer on and let the dough come together (the texture will be a little dry at this point). •Knead for 5 minutes at medium speed. •Next, with the mixer still on, add cubed, softened butter, one cube at a time. •Once all the butter has been added to the dough, add the riced potatoes. •Knead for 10-15 minutes until the dough passes the window-pane test. •Transfer to a lightly oiled bowl and proof for 90 minutes or until doubled in size. •Divide the dough into 9 x 90 g pieces and roll into tight rounds. •Arrange on lined baking trays with 10 cm baking rings (the rings are optional). •Cover and proof for about 45 minutes, or until the burger buns look nice and puffy. •Brush with egg wash, sprinkle on sesame seeds, and bake at 350F/180C for 12-15 minutes.
