My favourite alternative to fufu for some of my Ghanaian soups, like groundnut soup or palm nut soup, is omutuo Omutuo roughly translates to rice ball and is made with just here ingredients - rice, water and salt. Making it one of the easiest edible spoons to make. Rather than specific quantities I always follow the 1 to 2 ratio - for example, 1 cup of rice to 2 cups of water. You can even add a little more water for a softer texture. This ratio works with long grain rice so shorter grain rice might need less water. For substitutions, I haven’t tested this with brown rice, the red rice I used cooks pretty much like white rice whereas brown rice needs more time and water. Feel free to experiment with a little bit more water and a longer cooking time to see if it works. And since you will be mashing it, the water ratio is a bit more forgiving. I haven’t tried this with other grains but if you want to use other grains, it might be worth trying a different edible spoon all together as omutuo literally gets its name from rice. I get my red rice from various west African stores, they are not too hard to find but feel free to use any long grain rice (I don’t know if basmati will work) #vegan #ghanaianfood #omutuo #swallow #fufu #westafricanfood #africanfood #ghanafood #ghanarecipe #plantbasedrecipes #veganrecipes #fyp
