Had this dessert change and grow over 8 years. But it’s now retired and I won’t be doing this dessert ever again. Creativity and growth goes on, can’t keep hanging onto the past. Although this is the latest version of it before I took it off the menu. Consists of pistachio monte, yuzu caramel gel, marbled matcha chocolate, green apple sorbet, compressed apples, matcha sponge, lime yogurt snow, dulce cremeux and elderflower gel.
