Middle Eastern Lamb Skewers😋 Flavours of Sumac, Arabic 7 Spice, Cumin, and Fresh Herbs are what makes this marinade special. After removing and slicing up the lamb loins with the fat cap in tact, I marinated them for 3hrs in the Middle Eastern Spiced marinade. Recipe below👇 Grilled the lamb skewers over the charcoal @olivepipco flipping every couple of minutes until I had a nice char across the fat layers. When you are cooking with this much fat; a) It's not healthy😭 Save it for a treat or an occasion. (Can't believe I said that😆) b) You need enough heat to render as much fat, which usually means the doneness of the meat is more med-well to well-done. (score the fat cap to help render the lamb fat) As the lamb is marinated, it does help to keep the meat juicy. 🔸️ Middle Eastern Spiced Lamb Marinade Recipe 1/3 Cup Fresh Parsley, Finely Chopped 1/3 Cup Fresh Corriander, Finely Chopped 2 Teaspoon Ground Cumin 2 Teaspoon Ground Corriander 2 Teaspoon Onion Powder 1 Tablespoon Salt 1/2 Tablespoon Black Pepper 1 Tablespoon Sumac 2 Teaspoon Arabic 7 Spice 2 Garlic Gloves, Finely Grated 1/2 Cup Olive Oil 🔸️ Adjust the amount of oil to ensure your lamb marinade has a 'loose' consistency. 🔸️ Reserve some of the lamb marinade to baste your lamb as it cooks on the grill, and also as a finishing sauce sort of like Chimmichuri.
