Vegan Chickpea Korma 416 cal - 16g protein - 43g carbs - 7g fibre - 20g fat Pesto sauce (serves 2) Ingredients: - 1 medium chopped onion - 1 clove of garlic chopped - 1 tsp olive oil - 2 tsp medium curry powder - 1 tsp cumin - 200ml light coconut milk - 1 vegetable stock cube dissolved in 50ml water - 30g ground almonds - 300g chickpeas - 1/2 lemon juiced - Keto Skinny to serve Method: 1. Heat a sauce pan over a medium heat, add some olive oil, onions and garlic and fry until the onions are golden brown 2. Add the curry and cumin powder making sure all the onions are coated and fry for around a minute 3. Stir in the stock, ground almonds and coconut milk, then gently bring to the boil 4. Add the chickpeas, reduce the heat and cover, simmer for around 5-7 minutes, add the lemon juice 5. Serve with some Keto Skinny Rice!
