Replying to @megan Pastina aka “Italian Penicillin” Part Two ✨ This time with an egg, and I LOVED how creamy it made it! Next time I’m going to add just the yolk, so no whites get cooked, but regardless you couldn’t taste it and it was delicious! I’m a fan of less broth, but you can definitely add more depending on how soupy you want it ✨ 1 cup pastina or or acini de pepe 3 cups chicken broth 2 T butter Freshly grated parm, to taste Salt and black pepper, to taste 1 egg yolk, scrambled Olive oil (optional) 1. Bring your chicken broth, 1 T of butter, and a pinch of salt to a boil. Add in your pasta and stir. Cook for about 10 minutes, or according to package instructions, stirring occasionally. 2. Turn heat off and add in your egg yolk. Stirring constantly. 3. Once combined, add in your remaining butter and parm (I used about 1/2 cup). Stir until fully combined. Taste and adjust salt if needed. 4. Top with more fresh parm, black pepper, and a drizzle of your favorite olive oil (I use @Graza Drizzle).
