A healthy snack rebecca? crispy oven-roasted chickpeas: Ingredients: - 2 cans (15 ounces) chickpeas, drained and rinsed - 1 tablespoon cornstarch - 3 tablespoons olive oil - Salt to taste - Optional seasonings: Italian seasoning, paprika, garlic powder, cumin, chili powder, etc. Directions: 1. Preheat your oven to 400°F (200°C). 2. Drain and rinse the chickpeas, then pat them dry to remove excess moisture. Try to remove as many of the skins as possible. I find this makes them crisp up better 3. In a bowl, toss the chickpeas with cornstarch and seasonings of choice until they are evenly coated. 4. Drizzle the olive oil over the chickpeas and toss again to coat. 5. Spread the chickpeas in a single layer on a baking sheet lined with parchment paper 6. Roast in the preheated oven for 40 minutes, shaking the pan halfway through to ensure even cooking, until the chickpeas are crispy and golden brown. 7. Remove from the oven and let cool slightly before serving. Perfect as a snack or salad topper #chickpeas #healthysnack #crispychickpeas
