HIGH PROTEIN PEANUT BUTTER CUPS 🍫🥜😋 I loveee the combo of chocolate + peanut butter, and these high protein peanut butter cups are one of my favorite sweet treats to keep in my fridge for when I have a sweet tooth, but still want something healthy! Each peanut butter cup has 6g of protein, plus healthy fats from the peanut butter so not only do they taste amazing, they keep me feeling satisfied too! I love having one of these for dessert 🙌 My favorite protein powder is @promix Madagascar Vanilla whey! Makes 12 pb cups: ~90 calories, 6g protein, 6g fat, 6g carbs each Ingredients: - 1/4 cup dark chocolate chips - 1 tsp coconut oil - 1/3 cup natural peanut butter - 2 servings @Promix Nutrition vanilla protein powder (discount code ‘CLAIRE’) - Pinch of salt - 5 tbsp almond milk or water How to: - Add the dark chocolate chips and coconut oil to a microwave safe dish. Heat for 1 minute, then stir until fully melted. - Line a 12 hole muffin tray with paper liners. Use a spoon or brush to make a thin layer of chocolate on the bottom of each one. - Place in the freezer while you make the peanut butter layer. - To a bowl add peanut butter, vanilla protein powder and a pinch of salt. - Stir together, then add a tablespoon of almond milk or water at a time until a thick dough forms. I used exactly 5 tbsp of almond milk, but you might need more or less depending on which protein powder and peanut butter you use! - Put a tiny bit of coconut oil on your hands so the dough doesn’t stick, then roll a tablespoon of the dough into a ball, then flatten out and place in each cup. - Top with a thin layer of melted chocolate, then store in the fridge! Let set for at least 20 minutes before eating.
