Things are getting a little too chummy around here, so I thought it was time to ruffle some feathers with the truth bomb about your food. It’s NOT the same food your grandparents ate. According to USDA research, to get the same nutritional value from a carrot today as you would have from a carrot in the 1970s, you would need to eat 1.5 times more carrots. Broccoli has lost over 50% of its calcium. Spinach has 30% less iron. Tomatoes have less protein, riboflavin, phosphorus, calcium and vitamin c. The list goes on and on. Why? It’s not just on farmers. It’s also about consumer demand and the way we’ve prioritized cheap, abundant food over nutrient-dense crops. Farmers don’t see a market for better produce because you can’t see nutrient quality, and even if you could, it’s rarely cost-effective. For most farmers to stay afloat, they have to focus on yields over quality.
