A magical batter cake that self sauces to a jammy bottom and light spongey top Ingredients 50g margarine Zest and juice 2 limes 2 tbs coconut (optional) 175g sugar 3 eggs, separated Milk (approx 275ml) 50g plain flour Mix butter, sugar, zest and coconut first then add yolks, flour, milk and lime juice until a runny batter is formed. Whisk egg whites to soft peaks, fold into the batter. Pour into buttered bakeware. Cook at 175 Celsius for 35-40 minutes (or until super golden)
