Steak Salad Sundays Part 18 🥩🥗🍊 Salad: -2 cups arugula -sliced steak -1/2 cara cara orange, sliced -handful of cooked, peeled edamame -1/2 avocado, sliced -handful of sliced shallot -little bit of chopped mint -handful of crispy chow mien noodles -handful of toasted almonds -crumbled goat cheese -orange goat cheese vinaigrette Orange Goat Cheese Vinaigrette: * 1/2 cup olive oil * 2 tbsp white wine vinegar * Squeeze of cara cara orange juice * 2 cloves minced garlic * 1-2 tbsp hot honey * 1 tbsp dijon musty * 1 tbsp fresh chives, chopped * 1 tbsp fresh parsley, chopped * 1 tbsp fresh dill, chopped * 1/2 tsp salt * 1/2 tsp pepper * 1 large spoonful of goat cheese cheese * Add all ingredients to a jar and shake Steak (rib eye) * Pat dry, coat in olive oil, and coat each side generously in kosher salt and black pepper * Preheat grill to get it nice and hot (set to high heat, you want it around 450-500 degrees) * Place your steak directly on the grill, close cover, and let cook about 2 minutes. * After 2 minutes, rotate your steak 90 degrees while on same side (if you want grill marks). Close cover and let cook 2 more minutes. * Flip the steak and repeat above (cooking for another 4 min or so total on second side) * Use a meat thermometer to check temperature. I take off around 125 internal temp (med rare). * Total cook time will depend on size of steak but our took about 8-10 minutes.
