ENCHILADA SKILLET ๐๐ณ๐ถ๏ธ This is delicious, filled with vegetables and so easy to make! Only requires 1 pot too! ๐๐ผ RECIPE: brush one ear of corn with oil and add to a cast-iron skillet on high heat. Grill the corn for a few minutes each side then remove and add one diced onion. Once the onion is mostly cooked, add chopped garlic and green chilies. You can add ground beef, chicken, vegetables, or whatever filling you like. Mix in 3-4 tablespoons of taco seasoning, one can of black beans, your roasted corn, 1/4 cup of Greek yogurt and 2/3 can of enchilada sauce. Cut 4 to 5 corn tortillas into bite-size strips and add to the skillet. You may want to add remainder of the enchilada sauce. Layer cheese to the top and cover until melted.
