On the Greek island of Ikaria, cookbook author Diane Kochilas served us a beautiful cauliflower centerpiece that embodied her hands-off approach to cooking: minimal fussing for maximum flavor and freshness. In our adaptation of her whole-roasted cauliflower, we brush on a honey-mustard vinaigrette, which melds to the cauliflower during roasting. Near the end, add another swipe of mustard, press on a feta-parsley mixture, and roast again til the cheese just begins to melt.
