Tortang Talong (Japanese style) 🇵🇭🇯🇵🍆 collab w/ @ケンティー健人/kenty This is sort of like a combo of okonomiyaki/tortang talong but the ingredients are totally different except for the topping so I guess it’s its own thing?!! idk but it tasted really good!! Very simple to make too! feel free to use any ingredient you like :) INGREDIENTS: - 2 large eggplants/aubergines(??) - 4 eggs - 1/4 cup sakura ebi (dried shrimp) - 150g shirasu (whitebait) - 1/4 cup onion leeks, sliced - Salt & pepper to taste Topping: - Okonomiyaki sauce - Japanese Mayo - Aonori powder - Bonito flakes INSTRUCTIONS: - Roast eggplants over open flame until blackened. Place in a bowl and cover with cling wrap to steam for 15 mins. - Combine together beaten eggs, sakura ebi, shirasu and onion leeks. Season to taste with salt and pepper and mix well. - Peel skin from eggplants and lightly smash on a plate. Add your egg mixture on top. - In a fry pan with oil, transfer the eggplant and egg directly into the pan and let cook for about 2-3 mins per side. - Serve with okonomiyaki sauce, mayo, aonori and bonito and enjoy! #japanesefood #filipinofood #tortangtalong #okonomiyaki #pinoycooking #japanesecuisine #cookingasmr #asmr
