Spicy Chili Oil Vodka Pasta Ingredients * 3 tbsp chili oil(use my homemade chili crisp recipe) * 3 tbsp olive oil * 1 shallot(minced) * 4 cloves garlic(minced) * 3/4 cup tomato paste * 1/4 cup vodka * 1.5 cups heavy cream * Salt to taste * 1 lbs Rigatoni pasta * Parmesano Reggiano * 5 tbsp cold butter(cut into cubes) * 1/2 cup basil(torn) Instructions 1. Add chili oil and olive oil to a pan on medium heat and sauté shallots and garlic for a few minutes until translucent and fragrant. 2. Add tomato paste and cook it out for a few minutes to get rid of the tinny taste. Once the tomato paste starts to caramelize at the bottom of the pan, pour in vodka. Cook out the alcohol for a minute or so until most of the moisture has evaporated. 3. Add heavy cream and simmer on low for 30 minutes making sure to stir often to prevent burning. 4. Boil pasta in salted boiling water for about 7-8 minutes until very al dente. 5. On medium low heat, combine pasta with the sauce pouring in half a cup of pasta water at a time. 6. Once the sauce starts to cling to the outside of the pasta, add cold butter and stir so the butter emulsifies into the sauce. 7. Grate 1/2 cup parmesan and torn basil and give it a mix. Add more pasta water if it is too thick. 8.
