Another clarified cocktail alert! This one’s a big batch but it’s nice to have a lot of it chillin’ in my fridge ready to throw on a big cube and sip on. It was a little bit of a doozy only because I’m relatively new in the tiki space, but the end result is delicious. Feel free to play with the ratios, but I find that this recipe is balanced best! CLARIFIED PAINKILLER Ingredients: • 6 oz cream of coconut • 4 oz lime juice • 8 oz orange juice • 16 oz pineapple juice • 6 oz overproof rum • 12 oz Jamaican rum • 5 oz water (~10% dilution) • 12 oz milk (~1:4 milk to cocktail ratio!) Directions: 1. Add cream of coconut, juices, rum, and water into a large bowl (or container) and stir to combine. 2. In another large bowl (or container), add the milk. 3. Slowly pour the cocktail into the milk, and let it sit in the refrigerator anywhere from 4-8 hours. 4. After it sits, you should see some separation between the milk curds and the rest of the liquid (this is a good sign!). 5. Strain the mixture into a clean jar through a fine mesh sieve lined with 2 damp coffee filters. Your end result should be free of cloudiness!
