Blueberry Lavender Muffins ✨☁️ with the new @KitchenAid color of the year; Blue Salt 🩵 the recipe: 80g coconut sugar (200g) + 10g on top 55g (soy)butter 2 large eggs, room temp 100g yoghurt 120 ml (almond) milk, room temp 2 tsp vanilla extract 2-4 tsp lavender extract (I made mine myself) 310g all purpose flour 2 ½ tsp baking powder ¼ tsp baking soda 1/4 tsp salt 1 tbsp lavender (optional) 280g fresh blueberries, plus more for sprinkling on top 1. Preheat the oven at 200C. 2. Add the coconut sugar, (soy)butter, eggs, yoghurt, (almond)milk, vanilla extract and lavender extract to a bowl. Whisk for 2 minutes. 3. Add the flour, baking powder, baking soda, salt and lavender. Use a handmixer or KitchenAid to whisk it smooth. 4. Add the blueberries. Carefully stir them in the batter with a spatula. 5. Using an ice scoop, place 1-2 scoops in a muffin tin. Sprinkle coconut sugar or any other kind of sugar on top with 2 extra blueberries. 6. Bake for 20-25 minutes.
